An Extraordinary Ordinary Fish

There are so many exotic sounding fish being served in restaurants today that sometimes you don’t even know what you’re ordering. There’s ahi tuna, mahi-mahi, chilean sea bass, and all sorts of other offerings that you have to ask the waiter about before you dare to have it brought to your table. But I remember being a kid and my mom serving a few very basic kinds of fish that you don’t hear a lot about anymore and they were delicious. We’d go to the fish store on Friday afternoon and get a few nice pieces of cod or flounder or halibut. Come to think of it, does anyone out there have a good halibut recipe? I think my mom just used to put it in the oven for a few minutes on each side with some salt and pepper and maybe a little lemon.
